Remember the ‘SMART PASTA – 3D Shapes with a Purpose’ contest orchestrated by Barilla in 2015? The winners of this contest produced some really interestingly-designed pasta forms – for example, the ‘Water Lilly’, designed by Cornelius Comanns. Now, after several years of research & development, the first 15 designs of 3D printed pasta are commercially available on the BluRhapsody website’s shop and are already being used by chefs – especially in Italy to create high end custom dishes.

BluRhapsody, a spin-off project born from Barilla’s R&D research, began by creating a service offering the Barilla-developed pasta 3D printer to produce designs. Now the company has evolved to offers chefs the ability to purchase 3D printed, customized pasta pieces. Based in Parma, Italy (of course), BluRhapsody is the first startup from Blu1877 – a company set-up to interact with and support the efforts of those that are creating the future of food.

BluRhapsody’s base product consists of a selection of top-quality durum wheat semolina carefully crafted and kneaded in small amounts – ensuring perfect texture. BluRhapsody’s use of technological innovation has enabled the chef, as the artist, to create forms of pasta that are inspired by nature, or whatever else may be the inspirational flavor of the season, and transform their dishes into more highly-customized, edible works of art.

A real treat

Prices range from about $25 to about $35 for 12 large pieces of custom pasta, enough to make a few dishes. This price point is within range for those restaurants and chefs who create unique dishes, offering food as an experience for the senses. As seen by chef Teresa Irena‘s photos – posted on the CUCINA MOLECOLARE DESIGN INNOVAZIONE-CMDI Facebook group – chefs from around the world are now taking advantage of this novel 3D printed pasta.

Chef Teresa Irena’s 3D printed pasta dish

Teresa Irena’s dish consists of 3D printed pasta, avocado, beetroot, gorgonzola, lacticello, beet chips, papaya seeds, and extra virgin olive oil. The dish was created using BluRhapsody’s Kalpis Love Edition (12 pieces sell for €31,90 on the BluRhapsody website) pasta shape, which is made using durum wheat semolina, water, and natural extract with colouring properties. And, of course, BluRhapsody’s specially-designed 3D printer. Each unit of pasta weighs 7g and is 2.8cm x 3cm in size.
